If you're looking to switch up your lunch routine, look no further!
Let's be honest, lunch gets so boring. If you're like me, I typically resort to a salad or sandwich every single day. It's quick, easy, mindless, and a great way to get in all the food groups.
But I'll be the first to say that it can get SUPER boring.
Insert my Turkey Cheddar Apple Quesadillas.
More than likely, you already have all of these ingredients on hand, so let's pair them together for a legit lunchtime flavor explosion!
Here are some basics you'll need:
tortillas (I like whole wheat flour tortillas or cassava flour tortillas)
apples (my fave for this dish is granny smith)
cheddar cheese (yellow or white will do)
Oh! And the avocado cream that pairs really well with this is OUT OF THIS WORLD. Sharing it all below!
1 whole wheat tortilla
2 slices of deli turkey
1-2 slices deli cheddar cheese
1/2 apple, thinly sliced
1/2 cup spinach
1 large avocado
1/2 cup plain greek yogurt
juice of 1 lime
2 cloves garlic
salt / pepper
Heat a skillet over medium heat. Coat the pain in nonstick spray.
Place the tortilla in the skillet. Load the tortilla with cheese, turkey, apple, and spinach. Fold tortilla in half. Cook for a couple of minutes, then flip.
Once tortilla is golden brown and the cheese is melty, transfer to a plate.
To make the avocado cream, transfer avocado, greek yogurt, lime juice, garlic, salt, and pepper to a blender and blend until smooth.
Top quesadilla with avo cream and enjoy!
