If you're looking to lighten up your pizza night or you're wanting something a little quicker and less intense than going all out with making a full-blown traditional pizza masterpiece, I HIGHLY recommend slicing open a couple of zucchini and using this veggie as your crust.
It's delicious and sneaks in a little extra green into your day (a win-win in my book).
And the greatest thing about it is that it's only FOUR (yes, four) ingredients! Cheap + tasty!
Here's what you're going to do:
2 zucchini, sliced in half length-wise
1/2 cup marinara sauce (more or less for desired saucy-ness)
1/2 cup mozzarella cheese (more or less for desired cheesy-ness)
optional: any other of your favorite pizza toppings
1. Preheat oven to 350ºF.
2. Scoop out the insides of your zucchini.
3. Begin building your 'za, piling on the sauce, cheese, and toppings.
4. Place on a greased baking sheet and bake in the oven until cheese is melty and turning golden brown on top.
