
This is a for sure go-to lunch in my house. It's extremely easy and SO STINKING GOOD.
It's also a perfect side for any chicken dish, a great addition to a salad, or a good little midday snack.
All you need is about 5 minutes to throw this together. Minimal ingredients needed, and you more than likely already have them all on hand.
Beef it up a little bit by adding in grains like quinoa or farro.
Make sure you have these things on hand:
cucumber
tomato
red onion
chickpeas
olive oil
nuts or seeds (I like using walnuts or sunflower seeds)
optional grain add-in
Here's how to do it:
INGREDIENTS
1 cucumber, diced
1 package of cherry or grape tomatoes, halved
1/2 red onion, chopped
1 can of chickpeas, rinsed and drained
1/2 cup of walnuts or sunflower seeds
2 tbsp olive oil
juice of 1/2 lemon
salt and pepper to taste
DIRECTIONS
1. Mix everything together in a large bowl.
2. Serve immediately or store in fridge for up to 4 days.
