There are several ways to cook spaghetti squash, but I am totally convinced that this is the BEST way! Super easy, no fuss, and extremely flavorful.
Try these simple steps for the best spaghetti squash!
1. preheat oven to 400ºF
2. cut squash in half laterally, from stem to tail (If you do not have a good quality chef's knife, your squash may be more difficult to cut. Try microwaving the squash for a couple of minutes to make it softer and easier to cut)
3. scoop out seeds
4. coat the inside of squash with a drizzle of olive oil, salt and pepper, then place face down on a baking sheet
5. bake for 30-40 minutes. take out and shred the insides with a fork.

Spaghetti squash is loaded with fiber, is in season during the fall and is a good, low-carb stand-in for pasta. It's got a versatile flavor that pairs well with so many things!

-spaghetti squash spaghetti and meatballs
-in a burrito bowl
-stuffed with chicken sausage and goat cheese
-mixed with cheeses
-stuffed with pepperoni, marinara and mozzarella
