If you're looking for a hearty, protein-packed meal, look no further! This soup is crazy easy, extremely delicious, very cost-efficient, and perfect for freezing or meal prep.
The flavor here is incredible, too. And I don't know if you're like me or not, but anything that I can eat tortilla chips with is a done deal for me. Love it.
Ingredients are minimal here, and it takes no time to whip up!
Make sure you have:
black beans (obvi)
lots of flavorful spices (it's up to you how much you use! no measurements required, woop woop!)
2 tbsp olive oil
1/2 yellow onion
3 cloves of garlic
2 cans black beans
1.5 cups of chicken stock (use vegetable broth if vegan / vegetarian)
1 tbsp chipotle
1. Heat olive oil in a large pot over medium-high heat. When hot, add in onion and garlic. Sautee until fragrant.
2. Add in all other ingredients. Add spices to taste, as much or as little as you prefer. This recipe is totally adaptable. Turn the heat down to low and let simmer for 20-25 minutes.
3. Serve with tortilla chips, sour cream, cilantro, avocado, and / or shredded cheddar cheese.
