    goat cheese pesto BLT




    Listen, I love a good sandwich. It's a lunch staple in our home, so I'm always looking for a fun take on go-to classics.


    I grew up eating BLTs at home - My mom made them often for lunch or dinner, and I love them!


    This weekend I spent time with a sweet, sweet friend of mine who also happens to be one heck of a chef! She always inspires me with her creativity in the kitchen and dishes that are FULL of flavor. For lunch she whipped up a goat cheese pesto BLT that I am STILL thinking about! It's so good that the recipe needs to be in your hands, too!


    Give it a try for a freaking delicious but super easy lunch or dinner!


    INGREDIENTS

    for pesto:

    1/2 cup of olive oil

    4 cups of packed spinach

    2 cloves of garlic

    2 tbsp lemon juice

    1/4 cup parmesan cheese

    1/2 tsp salt

    1/4 tsp pepper

    4 oz. goat cheese


    for sandwich:

    whole grain bread

    romaine or arugula

    turkey bacon

    tomato


    DIRECTIONS

    1. For the pesto, add all ingredients (except for goat cheese) to a food processor and blend until smooth. You may have to use a spatula to scrape the sides then blend again. Once blended, stir in goat cheese.

    2. To cook turkey, preheat your oven to 400ºF. Line a baking sheet with parchment paper and place turkey slices on paper. Bake for 15-20 minutes, or until you reach preferred crispiness.

    3. On toasted bread, spread pesto on each slice. Then layer on tomato slices, lettuce, and bacon.

    4. Enjoy immediately!
