    fluffy gluten-free pancakes




    I look forward to weekends because my husband and I always make brunch together! It is one of my favorite things we do as a married couple. We mix it up every week, but I always love it when we make pancakes!


    Pancakes are fun because you can jazz them up with fun additions, and there are so many ways you can make pancakes. I'll use almond flour one week, coconut flour the next, and no flour at all another week! Pancakes are also great for crowds and kids.


    Last weekend I threw together gluten-free pancakes that are so thick and fluffy and wonderful you won't be able to stay away! Grab a gluten-free flour blend at the store (I love Bob's Red Mill) and see for yourself!


    INGREDIENTS

    1 cup gluten-free baking flour

    1/4 cup coconut sugar

    1 tsp baking powder

    1-2 tsp cinnamon

    1 tsp vanilla

    3/4 cup almond milk

    1 egg

    1/4 tsp salt


    DIRECTIONS

    1. Mix all ingredients together in a large bowl. Let sit for 5-10 minutes.

    2. Heat a pan or griddle over medium heat and grease with butter or coconut oil.

    3. Scoop out about 1/4 cup of batter for each pancake and place on hot surface. Cook for a couple of minutes on each side.

    4. Top with pure maple syrup, fruit and/or nut butter!
