Easy Summer Salmon Grain Bowl




I don't know about you, but when the weather starts warming up, quick and easy dinners that take no time are what I thrive off of. There's just something about hot weather and longer days that makes me not want to turn the oven on. Sorry not sorry.


That's why bowls of any kind are my jam during the spring and summer months! They are easy, mindless, and always satisfactory.


Salmon and summer are like PB&J in my opinion. They just go together. So when we look at this equation, a salmon bowl is like my dream.


Don't let salmon intimidate you! A lot of people shy away from it because they're unsure how to cook it properly, but it's way easier than you think. Plus, there are a million ways to cook it, so if you're not a grill master, you can toss it in the oven for an equally delicious end result.


When I construct any kind of bowl, I use this basic formula:


grain + protein + fat + veggies + condiment


Simple, right?


So for our salmon grain bowl, we've got:


farro + salmon + avocado + cherry tomatoes + sriracha


Y'ALLLLLLLLLLLLLL. It's so simple. And so good. The best part? You can use whatever you have on hand! Any kind of grain, go for it. Brown rice and quinoa are always great options. Toss in ANY veggies, maybe add some feta cheese. Seriously, this bowl is your masterpiece, so own it!


Here's what I did:


INGREDIENTS

1 cup farro (or any grain of choice)

2 salmon filets (I like to use skinless)

3 tbsp ghee (or oil of choice)

salt / pepper

juice of half a lemon

1 can chickpeas, drained and rinsed

cherry tomatoes (option to add any veggies you want)

avocado

sriracha


DIRECTIONS

1. Cook farro according to package instructions.

2. In a large pan, heat your ghee over medium heat. While that's getting hot, season your salmon with salt, pepper, and lemon juice. Place salmon in pan. Cook for 3-5 minutes on each side.

3. Build your bowl. Place farro at the bottom, add your salmon, 1/4 cup of chickpeas, cherry tomatoes, 1/2 an avocado, salt and pepper to season, and drizzle with sriracha.

4. ENJOY!
