When I was little, my favorite ice cream on the face of the earth was Ben and Jerry's Chunky Monkey. I don't know why, but I was obsessed with that underrated flavor! I like to think it's because of the amazing combo of banana, chocolate and walnuts (again, a very underrated combo).
I thought it'd be a great idea to recreate this flavor in banana bread - And let me tell you, it was DEFINITELY a great idea. This has become my favorite thing to bake! Not only is it extremely delicious, but it is so easy to throw together AND for all of you gals with food sensitivities, it is totally gluten-free and vegan!
IT. CAN'T. GET. ANY. BETTER. THAN. THIS.
So I sincerely hope you have a sweet tooth, because you totally need to make this. I'm super confident that banana + chocolate + walnuts will be your new favorite combo!
Some things to make sure you have on hand:
pure maple syrup
dairy-free chocolate chips
Can't wait for you to get to baking! This thing is fool-proof, so anyone (including you) can make this!
2 ripe bananas, mashed
1/4 cup pure maple syrup
1/2 tsp vanilla extract
1/2 cup creamy all-natural almond butter
1 3/4 cups gluten-free oat flour
1 tsp baking powder
2 generous tbsp cocoa powder
1/2 cup dairy-free chocolate chips
1/2 cup walnut pieces
1. Preheat oven to 350ºF.
2. Mix wet ingredients together in a large bowl.
3. Next, add the dry ingredients and mix well.
4. Add mixture to a greased bread pan.
5. Bake in the oven for about 30 minutes, or until a toothpick comes out clean.
