You would truly love to be intentional with breakfast, but in reality, mornings are just too busy, and an elaborate breakfast is the LAST thing on your mind. I mean, you're lucky to get out of the house with matching shoes on. And then the day gets started, and before you know it, you've fueled the past 4 hours with coffee and adrenaline. Lunchtime comes and you are STARVING.
Maybe you just "aren't a breakfast person." You don't love it, so you don't eat it.
I get it. Breakfast often takes a backseat, but what if it didn't have to?
What if you were able to have a DELICIOUS and healthy breakfast on hand every morning that fueled you well and you didn't have to put much thought into it?

Truly, this is super easy, super delicious, and perfect for batch-making (and freezing if needed). Make on Sunday and have a tasty go-to breakfast all week! It's totally up to you whether you want to keep it for yourself or share with the fam 😅
3 cups quick oats
1 3/4 cup milk of choice
1/2 cup pure maple syrup
1/2 cup plain Greek yogurt
1 tsp vanilla extract
3 tsp cinnamon
1 tsp baking powder
1/2 cup semi-sweet chocolate chips (honestly, I'm guilty of dumping the whole bag in there)
pinch of salt
1. preheat oven to 350°F.
2. In a large bowl, mix all wet ingredients together.
3. Add in dry ingredients and combine well
4. Transfer to a baking / casserole dish and bake for ~25-30 minutes, or until toothpick comes out clean (times will vary depending on size of your dish).
