buffalo chicken bake

Updated: May 5, 2020

I don't know anyone who hates buffalo chicken (and if you do, don't tell me). Whether it's buffalo chicken dip, buffalo chicken tenders, buffalo chicken wings, buffalo chicken sandwich, etc., it is truly just an insane combination and flavor explosion in your mouth.

I love throwing together this particular buffalo chicken bake for an easy dinner or a crowd-pleasing party dip for games or get-togethers! It's a lightened up version of traditional buffalo chicken dip, but can pass as a casserole or dinner bake. Whatever you want this to be, it can be just that!

Key components of this recipe are:

chicken breasts (fresh or frozen)

Frank's Red Hot buffalo sauce (there's no better option in my opinion)

plain greek yogurt

spices!! (they make the dish)

Now this is really important to note - I do love a good, technical recipe. BUT I love even more dishes that can be thrown together with no measurements. That's exactly what this one is. I promise you can't mess it up - it's totally fool-proof! So take the pressure off of yourself, taste as you go, put away the measuring cups, and literally throw this sucker together!

6-8 chicken breasts, cooked and shredded

plain greek yogurt (or mayo of choice)

Frank's Red Hot buffalo sauce

shredded cheddar cheese

shredded mozzarella cheese

garlic powder

dried onion

1. preheat oven to 350ºF. grease a large baking / casserole dish.

2. in a large bowl, add chicken, yogurt, buffalo sauce, and spices. add as much or as little as you want. taste as you go. want it really creamy? add more yogurt. want it really spicy? add more sauce. needs some more flavor? add more salt and garlic. seriously, it's all up to you!

3. transfer mixture to a baking dish. top with cheeses (as much or as little as you like, but the cheesier the better in my opinion).

4. bake for ~15 minutes, or until cheese is melted and starting to turn golden brown!

*pro tip - shortcut the recipe by using a pack of ranch seasoning mix instead of the individual spices!
