
If you've been following me on social for a while, you know that I have a thing for yogurt bowls (and if you haven't been following me on social, you totally should). I love them because so much protein, so yummy, and (the best of all) SO many amazing topping possibilities.
Now, I adore a good handful of granola just like the next person, but store-bought granola is usually full of multiple types of sugars and lacks sufficient nutrients (except you, @PurleyElizabeth). Plus, granola can get expensive. Solution? Make your own!
It's extremely easy to whip up a batch of your own granola, and it makes SO.MUCH. Tailor it to whatever flavor you're feeling, choose your add-ins, and customize it to your tastebuds. It's so good it'll be gone in a second!
Make sure you have these things on hand:
rolled oats
almond butter (you can sub any nut butter of choice)
coconut oil
pure maple syrup (or honey)
INGREDIENTS
2 cups of rolled oats
1/4 cup coconut oil, melted
1/2 cup creamy all-natural almond butter
1 tsp vanilla extract
3 tsp cinnamon
sea salt
1/2 cup of chocolate chips
1/2 cup almonds (whole or crushed)
1/4 cup chia seeds (or flax)
DIRECTIONS
1. Preheat oven to 275ºF. Mix wet ingredients together in a large bowl.
2. In a separate bowl, mix together all dry ingredients.
3. Pour wet ingredients over dry ingredients and stir until all oats are covered.
4. Spread the mixture onto a greased baking sheet. Bake for ~35 minutes, tossing halfway through.
5. Let cool and enjoy!
